Course Description

Curriculum involves in-depth study of the food and culture of the Mediterranean region with particular emphasis on context and place-related influences and the mythology of food.  Investigations will be made into the parallels of culture and agriculture through classroom lectures and extensive academic field trips to towns including Parma, Bologna, Venice, Modena, Pienza, Paestum, Tuscany.
